Wild Garlic Pesto recipe


The usual Italian dressing with unusual ingredients – basil replaced with wild garlic. It is delicious, very sharp and garlicky. I hope you like it.

Ingredients:
• Ramson – 150 g
• Parmesan (Parmigiano Reggiano) – 70 g
• Pine nuts – 50 g
• Olive oil – 100 ml
• Lemon juice – 20 ml
• Salt – 1/2 tsp.

Directions:

  • Wash and dry wild garlic; chop into medium-size pieces. Dry on the pan pine nuts.
  • Then rub the cheese on a small grater.
  • Blend the wild garlic and nuts in a blender.
  • Add the olive oil and blend it once more.
  • Finally, add a cheese and blend it until smooth.
  • If you’d like you can salt it a little and add lemon juice.
