Gazpacho recipe


It is famous Spanish cold soup, which is already widely spread throughout the world and is especially popular in hot weather.

Ingredients:

• Tomatoes – 1500 g
• Onions (100 g) – 1 pc.
• Sea salt – 1/2 tsp.
• Breadcrumbs – 150 g
• Paprika – 2 pcs.
• Garlic cloves – 2 pcs.
• Olive oil – 50 ml
• Cucumbers – 200 g

Directions:

  • Put peeled tomatoes, paprika and onions blend until puree.
  • Mash in a mortar peeled garlic with salt until smooth, then add olive oil and breadcrumbs. Pour a little water.
  • Add bread mixture into the vegetable puree and mix it well. If the soup is too thick, add a little water or tomato juice. Store it in the refrigerator for 1-2 hours, the soup should be very cold.
  • Separately dice bread and drain on a hot pan to get the croutons.
  • Clean the peppers and chop into small cubes.
  • Dice peeled cucumber. Serve cold, and put separately croutons and chopped vegetables.
